  • After 9 years, working as a pastry chef in some of the top kitchens in Ireland and the UK, I opened my own cake business Clare Anne Taylor, Couture Cakes. Clare Anne Taylor offers a wide range of wedding cakes designs. She also offers a bespoke service, where she collaborates with the client to create a bespoke design exclusively for them. This is achieved by reflecting inspirations from the flowers, lace, venue and style of wedding being planned. Clients love being involved and consulted throughout the design process, a unique and enjoyable experience. Having worked at The Ritz London, under Executive Chef John Williams MBE and at Le Manoir aux Quat’Saisons under Raymond Blanc and Chef Patissier Benoit Blin there is an acute attention to detail, using only the finest ingredients, and being guided by what is seasonally at its best. I was invited to join the judging panel for The Valrhona Patisserie Championship Ireland 2017 and 2019. I have attended masterclasses at the Peggy Porschen Academy, one of the UK’s finest cake designers and makers, and studied under Jasmine Rae, at Rosalind Miller Cakes, a truly innovative, intuitive and original artist breaking boundaries, and re-writing the rulebook. Sugar flowers are all handmade in house, and can be designed to compliment or even match your bouquet. Where fresh flowers are used, we work with the most wonderful florist who grows organic and edible flowers that are of the highest quality and beauty. Confections, Favours and Dessert Displays are all available in a multitude of flavours, executed to the most exacting standards. Favours are handmade, packaged and presented to match your chosen colour palette and styling for the day. Confections include, amongst others, delicious lemon butterscotch truffles, hand dipped rosemary chocolates, gingerbread macarons and chocolate choux buns with liquid hazelnut praline centres.
